Garlic-Roasted Kale

Serves: 6     Prep time:  5 minutes   Cooking time:  12 minutes

3 ½ tsp sesame oil
½ tsp sea salt
1 garlic clove, thinly sliced
1 bunch kale, stems removed
1 tsp sherry or rice vinegar

  1. Arrange oven racks in lower third of oven and heat to 425°.
  2. Remove stems from kale and tear or cut into bite-size pieces.
  3. Combine oil, salt, garlic and kale – toss to coat.
  4. Spread kale onto cookie sheet pan.
  5. Bake for 7 minutes. Stir and bake an additional 5 minutes. Kale should be tender with crisp edges.
  6. Place kale in a bowl and toss with vinegar.
